Yield: Serves 4 Ingredients:

  • 2 Tbsp Pure NY Maple Syrup
  • 2 Tbsp Apple Cider Vinegar
  • 1 Tsp Maple Mustard
  • 1/3 Cup good quality Olive Oil
  • 2 Tbsp finely chopped fresh herbs (whatever you have in the garden – basil is a good option)
  • Pinch of Garlic Salt

Directions:In a small bowl, combine maple syrup, vinegar, and maple mustard. Slowly whisk in the olive oil. Add herbs and garlic salt. Serving suggestions: For dinner, divide 6 cups of fresh baby spinach leaves on four plates, crumble on bleu cheese, add sliced grilled chicken, and drizzle with this dressing. For a nice side salad, toss with mixed greens, goat cheese, sliced red onion or shallot, and maple roasted pecans.
